Today we made mini pumpkin-apple muffins. First we had to read the recipe, then we had to measure the ingredients and mix them all together, next we put the batter into the muffin cups which went into the oven and after they cooled we got to eat them! We also talked about kitchen safety and how to keep our food free of germs. Check out our procedures below:
The recipe:
Ingredients:
1 1/2 cups flour
1/2 cup packed brown sugar
1 tsp. cinnamon
3/4 tsp. baking powder
1/2 tsp. baking soda
2 large eggs or (1 egg= 2 tbsp water mixed with 1 tbsp of oil and 2 tbsp of baking powder. Mix well before adding- double this if replacing eggs in this recipe OR 1 banana for every egg)
3/4 cup canned pumpkin purée
2/3 cup unsweetened apple sauce (two 4-oz. cups)
1/2 cup vegetable oil
1/2 cup packed brown sugar

Directions:
Preheat oven to 350 degrees F. Lightly spray a mini muffin tin with non-stick cooking spray.In a large bowl, stir together whole wheat flour, brown sugar, pumpkin pie spice, baking powder, and baking soda. Make a well in the centre and add mashed bananas, pumpkin, apple sauce and oil. Mix just until the dry ingredients are absorbed. Fill mini muffin cups with batter.
Bake for approximately 15 minutes, or until the tops spring back when lightly touched. Cool in the pan before removing from cups.

You need to use two hands so you don't drop the muffins
The muffin batter is in the oven. Next we waited 15 minutes!
We used a toothpick to make sure the muffins were cooked inside
It came out clean so that means they are ready
While the muffins cooled, a few friends made some cards for the office staff which they delivered with a muffin as a gift.
